Todd,
Do you slice off little thin strips of steelhead when you filet them and eat the strips as sushi? Is this what you are suggesting in your post?  I never tried sushi before, but the first time i fileted a fish I ate some of it raw. It was just as repulsive as I expected. Happy Birthday

That being said...a nice May or June summer run makes excellent sashimi, to my tastes, at least...you can't really make a winter run taste like much except what you put on it, so I would pass on making sashimi out of it!
